Black Garlic Extract is a food made by aging fresh garlic heads or separated cloves in a controlled humidity (80-90%) and 60-90 °C (140-190 °F) range for 15-90 days (typically 85% humidity for 40 days at 70°C), without the use of any additives or preservatives, and without any form of burning. During this process, the enzymes that crisp fresh garlic break down and a Maillard reaction occurs, a chemical process that produces new flavor compounds that cause the color of garlic to change from cream to black, hence the name black garlic.
